I used a 50 50 pork but and venison smoked half steamed the other half. I also have a one pound of each in a pickle brine I love pickled bologna the dogs should be good also.

I smoked my wieners on an offset style smoker which dehydrated them before they were Smoked to proper temp. The result? Some of the best tasting venison snack sticks I have ever eaten!
