Description
A cure specifically formulated to be used for making dry cured products such as pepperoni, hard salami, genoa salami, proscuitti hams, dried farmers sausage, capicola and more. These are products that do not require cooking, smoking, or refrigeration. Insta Cure No. 2 can be compared to the time release capsules used for colds–the sodium nitrate breaks down to sodium nitrite and then to nitric oxide to cure the meat over an extended period of time. Some meats require curing for up to 6 months. InstaCure #2 contains salt, sodium nitrite (6.25%) and sodium nitrate (1%).
- Use 1 level teaspoon per 5 lbs. of meat
- 8 oz. of Insta Cure will process approximately 240 lbs. of meat

I actually ordered Insta Cure 1. I called the customer service number and explained that I might have selected the wrong one. The gentleman who answered the phone asked for my order number and asked what I was trying to order. I told him #1, not #2. No problem, he replied, we will send that out to you tomorrow, and no charge. Best customer service I’ve seen in years!

My only gripe albeit a small one is that if I’m going to order I usually weight for times when the shipping is free only because the shipping rates you offer are quite high. You’re located in NY I’m located in NY and to pay almost $17.00 for shipping and handling for an order that amounts to $24.00 is just a bit much!
