Our Natural Hog Casings 35-38mm are an edible casing. These casings are generally used for making kielbasa, pepperoni, knockwurst, and rope sausages. The casings are sourced from North American hogs only.

One pound of meat will use approx. 2 feet of casing. The casings are packed in purified salt and have an indefinite shelf life when stored in the refrigerator. Flush and soak in tap water before using.

    Preparing Natural Casings 

    1. Remove the approximate amount you will need.
    2. Place casings in a clean food-safe bowl.
    3. Rinse casings of salt under cool running water.
    4. Flush the insides of casings to assist in smooth casing application.
    5. For small casings (<42mm): place bowl in cool water to soak for about 2 hours in the refrigerator prior to use.
    6. For larger casings (>42mm): place the bowl of the beef bung, middles, and/or rounds in the refrigerator to soak overnight prior to use.
    7. Optional for smell control – add ½ tsp baking soda per cup of water.
    8. Optional for tenderizing – squeeze a lemon or add a tablespoon of white vinegar to soaking water to refresh casings.

    Refrigeration
    The natural casings should be kept refrigerated until ready for use. Un-refrigerated, these salted casings may give off a strong odor. This is Normal. Simply put the casings back into the refrigerator and the odor will subside. Natural casings should never be frozen. It affects their integrity after thawing and will cause more blowouts.

      I love that the casings are so clean and white. The packaging is also good and makes it easy to prepare. My friend asked, “Where did you get these wonderful casings?” I usually used the 31-35 mm so will be interesting if anyone notices the larger 35-38 mm this time.

      My issue with this order is the length of time that it took to get here. I’ve used Sausage Maker for years and really like that there’s one place I can go to to get all this stuff. I don’t make enough sausage and charcuterie to bother with finding a vendor, SM is easier. The quality is always great, but this time the order took weeks to get here and there was no communication that there was a delay or that it was still coming. At one point I even got an email that my order should be here, but if it wasn’t to just wait a few days. Seriously?? I finally gave up and had one of my meat purveyors find casings for me. By the time my order from SM came in I had gotten the other casings, made the sausages, and sold out of them!

      I’m sure you’re having issues operating during the pandemic, just like we are in the restaurants. I’ll continue to support Sausage Maker and I’m glad that you’re still around. I never want to leave a bad review, I was just disappointed this time around.

      Delivery driver had me unpackage the product due to container being soaked, upon inspection the plastic housing of the hog casings apparently had a hole somewhere in it allowing for the brine liquid to leak out, I removed the contents from the container and created a brine solution placing the casings in a separate container at this time.
