Description
Our Smoked Collagen Casings 32mm is ideal for making smoked sausages and Bratwurst. These casings are popular for smoked sausages because they can withstand the smoking process without bursting. The smoking imparts flavor to the casing and the sausage itself.
This casing is used for fresh sausage only. These casings are pleated into strands that can be unfurled and placed on 1/2″ or 3/4″ stuffing tube.
Fresh collagen casings are thin and tender and virtually adhere to the meat after they are stuffed. Made from the hide of cattle, edible. Keep refrigerated.

A little difficult to work with and you need to cut the piece small enough to get it onto your Funnel extension as you can not load the entire piece unless your Funnel is different that mine.

Held up good while stuffing it. I think I might have overstuffed it since the casing pealed from the venison brats I made when I cooked them. Don’t think anything was wrong with the casings itself.

I’ve used these a couple of times making beef sausage and they worked perfectly. Good on my venison with green chili sausage, too. Much easier to deal with than pig casings since there is no flushing of “stuff” out of them or anything like that. They’re made from beef hide scrapings that are molded into tubes so it’s “all beef” and no chemicals or fillers.
