Sweet Italian Sausage Seasoning 1lb 8oz has a fresh, sweet, earthy, spicy, anise-like aroma. It contains black pepper, cracked fennel seed, salt, sugar, and spices. Not only can the seasoning be used in pork sausage, it can also be used as a dry rub or to season red sauces.
The seasoning is mixed without the chemical use of silicone dioxide, an anticaking agent. If the seasoning cakes up, it is not spoiled. Simply shake the container or crush with your hand to loosen.

10 lbs. Recipe
- 10 lbs. boneless pork butts or 7 lbs. Venison & 3 lbs. fatty pork butt
- 1 pint ice water
- 4.5 oz. Sweet Italian Sausage Seasoning
Grind all the meat through a 3/8″ grinder plate and mix all the ingredients into meat until all the spices are evenly distributed. Sweet Italian Sausage may be stuffed into 32 -35 mm hog casings or 32 mm fresh collagen casings.
Allergens: Soybean oil used as a mixing aid.
*Casing capacity depends on meat/fill density, size/lengths of links or loops and how tightly casings being filled.

Provides a very nice and mild italian sausage flavoring. I read some reviews that said it was salty. When I looked in the jar, I did notice that the salt was separating from the rest of the seasonings making it difficult to get a good mixture, so I just ran the whole jar through a bullet food processor to grind it together fine and put it back in the jar This worked out very well, no salty taste.

I tried this seasoning for mild Italian sausage and found it to be way too salty. In the 1# 8oz. example I used more than 1# of the mix was just salt. I have taken to making my own blend without all the salt.

I ordered this mix back on 9/25/2021 and found the mix to be way too salty. Why not leave the salt out of the mixes? It would cut down on shipping costs and I can add kosher salt myself. That way if the sausage has too little or too much salt I have nobody but myself to blame. After leaving my negative review online for a couple months it has now been deleted by The Sausage Maker. Have you noticed all reviews appear to be 4 or 5 stars? If the company isn’t going to post all reviews they have a basic honesty problem with their management or employees.
